Key formulas (how to estimate quickly)
- Tables = Total seats ÷ Average party size (round down to whole tables)
- Operating minutes = Hours open × 60
- Estimated turns per table = Operating minutes ÷ Average dining time (minutes)
- Estimated covers = Tables × Estimated turns per table × Average party size × (1 - No-show rate)
- Estimated revenue = Estimated covers × Average check
Quick example
Restaurant with 80 seats, avg party 2.5, dinner 4 hours, avg dining time 75 minutes, reservation share 30%, no-show 8%, avg check $35.
- Tables = 80 ÷ 2.5 = 32 tables
- Operating minutes = 4 × 60 = 240
- Turns per table = 240 ÷ 75 ≈ 3.2
- Estimated covers = 32 × 3.2 × 2.5 × 0.92 ≈ 236 covers
- Estimated revenue = 236 × $35 ≈ $8,260
To estimate impact of a 10-minute reduction in dining time, recompute turns per table using 65 minutes and compare covers and revenue.
