Common guidance: Refrigerators: 33–41°F (0.5–5°C). Freezers: -10–0°F (-23 to -18°C). Hot-holding: ≥135°F (≥57°C). When readings are out of range, take immediate corrective action and document it. Consider using a certified probe thermometer and recording probe calibration dates in your site master data.
