Purpose
Use this template to create short on-the-job training modules that produce consistent, measurable competence. Each module describes what the learner should be able to do, what they need beforehand, the step-by-step procedure to practice, observable demonstration criteria, assessment methods, and how to record competency.
How to use this template
- Copy the template into your authoring tool or content item.
- Fill each field with role- and location-specific details.
- Keep modules focused: one core skill or closely related set of tasks per module.
- Define measurable outcomes (behaviors you can observe or score).

Learning Goal (measurable)
Write a single measurable sentence describing observable behavior. Use action verbs such as "demonstrate," "perform," "prepare," or "verify." Include acceptable tolerance or time where appropriate.
Example: "Given standard ingredients and tools, the trainee will prepare and plate the signature burger to recipe standards and within a 7-minute ticket time in 4 of 5 observed attempts."
Prerequisites
- Required knowledge or completed modules (e.g., temperature control basics, knife safety).
- Required certifications or clearances (e.g., food handler card).
- Equipment or station setup needed before training begins.
Estimated Time
Example: 15–25 minutes (10 min explanation + 10 min hands-on practice + 5 min assessment)

Step-by-step Procedure (trainer script / key steps)
List the essential steps a competent person follows. Keep steps brief and ordered so a trainer can read or demonstrate them.
- Set grill temperature to X°F and preheat for Y minutes.
- Portion and form patties to Z oz using scale.
- Place patties on grill; cook 3 minutes per side or until internal temp reaches T°F.
- Toast bun, assemble with specified ingredients and garnish per recipe card.
- Check plating consistency and deliver to pass within 7 minutes of order time.
Trainer Demonstration Checklist (observable behaviors)
Use this checklist while the trainee demonstrates the task. Mark Observed / Not Observed and add notes where needed.
- Prepares work area and verifies equipment settings
- Weighs portions to specified tolerance
- Follows cook times and uses thermometer correctly
- Assembles in correct order and portions
- Meets plating and presentation standards
- Completes task within acceptable ticket time
- Adheres to food safety (glove use, cross-contamination prevention)
Assessment (summative)
Combine a performance observation with 3–6 short knowledge or scenario questions. Define passing criteria.
Performance scoring example: Observe 7 checklist items; score 1 point each. Pass = 6/7 or higher.
Sample knowledge questions:
- What is the required internal temperature for this product? (Short answer)
- If a patty is undercooked after 3 minutes each side, what should you do? (Scenario — describe corrective action)
- List two critical contamination risks at this station and how to prevent them. (Short answer)
Remediation & Recheck
If the trainee fails the assessment, document which checklist items were missed, schedule targeted remediation practice for those items, and plan a recheck within a defined timeframe (e.g., within 48–72 hours). Describe the remediation activity (e.g., 20 minutes of focused practice with trainer demonstration and feedback).
