Choose the shift this plan covers.
Predicted number of guests for the shift (from your forecast or POS).
E.g., 12:00–1:30 PM
Estimate how confident you are in the forecast (0–100).
E.g., Grill, Fry, Salad, Bakery
What you will prep (e.g., 20 burger patties, 10 qt tomato sauce).
Planned finished units (portions, pieces, quarts, etc.).
Planned start time (HH:MM).
Percent yield after trimming/cooking if applicable.
How long the batch can be held before service (e.g., 2 hours at 41°F).
Confirm labeling and use-by information.
Is the staging bin at the target level for service?
Any cross-station handoffs, allergen notes, or timing constraints.
Cold hold / hot hold checks recorded and acceptable.
Brief on specials, predicted timing, and expected issues.
