Purpose

Quickly capture what was wasted today, why it happened, and a short triage action so teams can test fixes and measure progress. Use this form during or immediately after each shift. At the end of the week, combine entries into a short summary that converts waste into an estimated margin impact and a short action plan.

How to use

  1. Log each distinct waste event (one event per line item) — what was wasted, quantity, cause, and an immediate triage suggestion.
  2. If there are more events than fit here, submit again or add them in the item slots provided.
  3. At the end of each day or week, fill the weekly summary field with patterns, owners, recommended experiments, and priority actions.

Notes on margin impact

This tool collects estimated cost for each waste event. To estimate margin impact for your business, use your finance practice (for example: total daily estimated food cost saved can be used directly as a gross profit improvement; your finance team can refine for contribution margin or net profit). Enter your local food cost % in the form to help with local calculations.

Who completed the log (name and role).
Repeat entries up to the number of item slots below. Submit multiple times if needed.
Short name (menu item or ingredient).
Enter numeric quantity or weight (use unit field).
Quick note (e.g., 'sauce overcooked', '12 portions cut too large').
Estimated wholesale cost of the wasted quantity. If unknown, estimate conservatively.
Repeat fields for additional events.
Number of waste line items you entered for today.
Sum of quantities you recorded (manual sum).
Sum of item estimated costs. This is the primary number for quick margin checks.
Your typical food cost percent to help contextualize savings.
Optional: enter your own estimated margin impact. Use your finance method. As a simple starting point, the daily total estimated cost is the immediate reduction in food cost.
At week end, summarize recurring causes, recommended experiments (who, what, when), and top 3 priorities. Use this field to capture the weekly action plan.
Short list of immediate corrective steps (example: 'Maria: retrain on portioning by Fri').
