How to use

  • Complete the pre-service items before service begins.
  • During service, perform the quick checks at least once per peak hour and whenever a problem is suspected.
  • If a field is 'Not OK', describe the issue, the immediate corrective action, who performed it, and confirm follow-up.

Keep entries concise. This form is designed to be fast — it focuses on the critical controls that most often cause guest-impacting variability.

Optional: specify location, line, or station if relevant.
Who performed this check? Enter name or initials.
Spot-check that prepared quantities align with forecast and expected covers.
Record immediate corrective actions, who did them, and follow-up needed.
Check holding equipment and product temperatures for critical items.
Example: 'Chicken hold: 50°C — moved to hot-holding, notified manager, discard threshold review.'
Visual + quick spoon test for texture/consistency. Note batch/time if off.
Check internal temps on a representative sample (e.g., 1–2 per protein batch).
Quick check: weigh or count sample portion(s) to confirm.
Check freshness, portioning, and accessibility on the line.
Chef or lead should plate a representative sample and assess sensory quality.
Describe any off-notes, temp issues, or texture problems and actions taken.
Confirm that POS specials/mods display clearly to kitchen and pass to the line.
During peak, taste or visually inspect a random plate each hour. Note approximate time in notes.
A quick visual/walk-by check: are plates leaving the pass within target times and accurate?

List responsible person, immediate action, and any required follow-up checks.
